For those times when you feel like flexing a little more creative muscle try the PASM modes.

You can experiment with various exposure controls to get the look you are after. Take control of the amount of light coming into the camera by changing the aperture (A), or length of time the shutter stays open (S), or take total exposure control by manually selecting both aperture and shutter speed (M). The PASM modes put you as in charge as you want to be.
